How to Cook Adobo? I got you!

Ingredients:

1 kg chicken or pork (or a mix of both)
1/2 cup soy sauce
1/4 cup vinegar
4-5 cloves garlic, minced
1-2 bay leaves
1 tsp whole peppercorns (optional)
1 cup water
1 tbsp oil
1 tbsp sugar (optional, for a sweeter taste)
Instructions:

Marinate the Meat
Combine soy sauce, half the minced garlic, and the meat in a bowl.
Let it marinate for at least 30 minutes (or overnight for deeper flavour).

Sauté the Garlic
Heat oil in a pot or pan over medium heat.
Add the remaining garlic and sauté until golden brown.

Cook the Meat
Add the marinated meat (including the marinade) to the pan.
Sear the meat until lightly browned on all sides. Simmer

Add vinegar, bay leaves, peppercorns, and water.
Bring the mixture to a boil, then lower the heat to a simmer.
Cover and let it cook for 30-40 minutes or until the meat is tender. Stir occasionally.
Season to Taste

Add sugar if desired and adjust the taste with more soy sauce or vinegar, depending on your preference.

Reduce the Sauce
Remove the lid and let the sauce simmer uncovered for another 10 minutes to thicken. Serve

Serve hot over steamed rice, and enjoy!
